Creamy kiwi pancakes recipe details
Ingredients
150 g | flour |
250 ml | milk |
2 | eggs |
3 tbsp | sugar |
4 tsp | oil |
6 | kiwi, peeled and sliced |
3 tbsp | honey |
150 g | cream cheese |
some | mint leaves |
2 tbsp | milk |
Instructions
In a bowl, mix together the flour, eggs, milk, 2 tablespoons of sugar and 2 teaspoons of oil. Allow the batter to steep for 30 minutes.In a saucepan, heat the remaining oil and bake 4 pancakes over medium heat. Cover the pancakes and set aside.
In a pan, combine the kiwi and the honey. Simmer over low heat for 2-3 minutes.
Mix together the cream cheese, the remaining sugar and the milk. Stir until smooth. Add more milk, if necessary.
Spread the cheese mixture onto the pancakes and roll up. Place the kiwi slices on top and garnish with fresh mint leaves.
