Ingredients

150 g flour

250 ml milk

2 eggs

3 tbsp sugar

4 tsp oil

6 kiwi, peeled and sliced

3 tbsp honey

150 g cream cheese

some mint leaves

2 tbsp milk

Instructions

In a bowl, mix together the flour, eggs, milk, 2 tablespoons of sugar and 2 teaspoons of oil. Allow the batter to steep for 30 minutes.

In a saucepan, heat the remaining oil and bake 4 pancakes over medium heat. Cover the pancakes and set aside.

In a pan, combine the kiwi and the honey. Simmer over low heat for 2-3 minutes.

Mix together the cream cheese, the remaining sugar and the milk. Stir until smooth. Add more milk, if necessary.

Spread the cheese mixture onto the pancakes and roll up. Place the kiwi slices on top and garnish with fresh mint leaves.
