Creamy egg casserole recipe details
- Ingredients:
- 18 eggs, slightly beaten
- 1 Tablespoon butter
- 1 cup shredded cheese of your choice
- White sauce:
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk (low fat is okay)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Topping:
- 1 cup soft breadcrumbs
- 2 Tablespoons melted butter
White Sauce: Melt butter in a heavy saucepan over low heat. Add flour, stirring until smooth. Cook for one minute, stirring constantly. Gradually add milk. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in the salt and pepper. Set aside.
Melt butter in a large skillet. Cook eggs until almost set. Remove from heat and stir in the white sauce. Place into a buttered 13 x 9-inch baking pan. Sprinkle with cheese.
Sprinkle topping evenly over cooked eggs. Bake, uncovered, at 350 degrees for 25 minutes or until thoroughly heated.
Note: Casserole can be prepared up to 24 hours ahead. Cover and refrigerate, unbaked. Remove from refrigerator and let stand 30 minutes before baking as directed.
