Creamy Asparagus Soup recipe

|2 kg||asparagus, cleaned, cut into small pieces|
|1 large||onion, chopped|
|3 tbsp||butter, unsalted|
|1.2 l||vegetable broth|
|80 ml||double cream|
|1 tbsp||dry vermouth|
|1 tsp||fresh lemon juice|
|salt and pepper, to taste|
Sauté onion in butter in a heavy pot over low heat, stirring, until softened. Add asparagus pieces and salt and pepper to taste. Cook, stirring, 5 minutes. Add broth and simmer, covered, until asparagus is very tender, 15-20 minutes.
Purée soup in batches in a blender until smooth.
Transfer back to the pot and stir in cream. Stir in vermouth and a squeeze of lemon juice.
