Ingredients
2 kg | asparagus, cleaned, cut into small pieces |
1 large | onion, chopped |
3 tbsp | butter, unsalted |
1.2 l | vegetable broth |
80 ml | double cream |
1 tbsp | dry vermouth |
1 tsp | fresh lemon juice |
salt and pepper, to taste |
Instructions
Sauté onion in butter in a heavy pot over low heat, stirring, until softened. Add asparagus pieces and salt and pepper to taste. Cook, stirring, 5 minutes. Add broth and simmer, covered, until asparagus is very tender, 15-20 minutes.
Purée soup in batches in a blender until smooth.
Transfer back to the pot and stir in cream. Stir in vermouth and a squeeze of lemon juice.
