Crazy potato and bean salad recipe details
Ingredients
5 medium | blue potatoes |
300 g | green beans, trimmed and halved |
1 | shallot, finely chopped |
1 sprig(s) | savory |
1 tbsp | white wine vinegar |
3 tbsp | vegetable stock |
2 tbsp | rapeseed oil |
1 tsp | pumpkin seed oil, if available |
salt and freshly ground black pepper |
Instructions
Cook the potatoes in their jackets for approximately 30 minutes. Cook the beans in generously salted water for 8-10 minutes. Drain and separately plunge both briefly in ice-cold water, then drain again. Peel and slice the potatoes and put into a salad bowl. Add the beans and the shallots.Combine the stock with the vinegar and season with salt and pepper. Pour over the salad and leave to soak for 10 minutes. Add the oil, toss and adjust seasoning. If available, add a dash of pumpkin seed oil and toss again.
Looks crazy and tastes very good. Goes well with rissoles or fried sausages.
