Cranberry pancakes recipe details
- Ingredients:
- 1/2 cup whole-wheat flour
- 1/2 cup unbleached white flour
- 2/3 cup cornmeal
- 1/3 cup rolled oats
- 2 teaspoons baking powder
- 4 teaspoons sugar
- 1/2 teaspoon baking soda
- 2 eggs
- 1 cup applesauce
- 1 cup milk
- 3 Tablespoons melted butter
- 1 cup cranberries
- 1/4 cup sugar
Mix together all dry ingredients except 1/4 cup sugar. Blend eggs and applesauce in blender. Add milk and butter, then dry mixture and mix well. Put cranberries and remaining sugar (to taste) in food processor and blend until chopped (leave some big chunks). Stir processed cranberries into batter.
Make pancakes as usual. Serve with butter, maple syrup, jam, applesauce, or sour cream.
