Cranberry nut muffins recipe details
- Ingredients
- 2 cups all-purpose flour
- 2/3 cup sugar
- 2-1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup milk
- 1/2 cup unsalted butter
- 2 eggs
- 2 cups whole cranberries
- 1/2 cup chopped walnuts
These muffins are sweet, buttery, crunchy, and delicately spiced with a cake-like texture. Fresh cranberries are best, but if you use frozen berries, stir them into the batter without thawing or their dark juices will turn the muffins pink.
Preheat oven to 375 degrees. Grease standard muffin tin. In a medium bowl, stir and toss together the flour, sugar, baking powder, baking soda, salt, and cinnamon. Set aside.
In another medium bowl, whisk together milk, butter, and eggs until smooth. Add the combined dry ingredients and stir just until blended. Add cranberries and stir until evenly incorporated.
Spoon into prepared muffin tin, filling each cup about 3/4 full. Bake 15 to 20 minutes. Cool in the tins for 5 minutes, then remove and enjoy!!
