- 3/4 cup orange juice
- 1 egg
- 2 Tablespoons cooking oil
- 2 cups flour
- 3/4 cup sugar
- 1-1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup chopped cranberries
- 1/2 cup chopped walnuts
Combine juice, beaten egg, and oil. Stir together flour, sugar, baking powder, salt, and baking soda. Add juice mixture and stir until moist. Fold in cranberries and nuts. Pour into lightly greased and floured pan. Bake 350 degrees for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool ten minutes and remove from pan to cool on wire rack. Freezes well.
