Ingredients

6 tbsp unsalted butter
6  anise pods
2 stick(s) cinnamon, broken
½  vanilla bean
500 g cranberries
100 g brown sugar
2 tbsp sherry vinegar
1 tbsp Pernod
1 tsp grated lemon zest
1 tsp grated lime zest

Instructions

Melt butter in a a large saucepan. Add the cinnamon sticks, anise pods and vanilla bean and cook over high heat for about 1 minute.

Add the cranberries and brown sugar, cover and cook over low heat, stirring occasionally, until the cranberries burst, about 5 minutes. Add the vinegar and Pernod and cook for further 2 minutes.

Discard the anise pods, cinnamon sticks and vanilla bean and stir in the lemon and lime zests. Stir well.

Remove from heat and let the mixture cool to room temperature before serving.

The compote can be refrigerated for up to 1 month.
