Courgette and tomato lasagna recipe details
Ingredients
100 g | mushrooms, diced |
250 g | tomatoes, peeled and diced |
250 g | courgette, roughly grated |
1 | onion, chopped |
1 clove(s) | garlic, minced |
2 tbsp | oil |
1 tbsp | flour |
½ tsp | instant vegetable stock |
½ tsp | oregano |
1 tbsp | basil, chopped |
1 tbsp | parsley, chopped |
salt and pepper | |
120 ml | single cream |
250 g | grated cheese |
400 g | sheets of lasagna |
Instructions
In a saucepan, heat the oil and fry the onion and the garlic over medium heat until lucent. Stir in the flour and cook stirring for 1-2 minutes. Add the mushrooms, tomatoes and courgettes. Season with salt, pepper, oregano and the instant stock. Cook for 4-5 minutes. Pour in the single cream, basil and parsley and cook stirring for another minute.Preheat the oven to 200°C.
In a buttered casserole dish, coat the bottom with some of the vegetable sauce, then layer in turn sheets of lasagna and vegetable sauce. The last layer should be sauce.
Sprinkle with the grated cheese and bake for 30-40 minutes.
