Ingredients

100 g mushrooms, diced
250 g tomatoes, peeled and diced
250 g courgette, roughly grated
1  onion, chopped
1 clove(s) garlic, minced
2 tbsp oil
1 tbsp flour
½ tsp instant vegetable stock
½ tsp oregano
1 tbsp basil, chopped
1 tbsp parsley, chopped
salt and pepper
120 ml single cream
250 g grated cheese
400 g sheets of lasagna

Instructions

In a saucepan, heat the oil and fry the onion and the garlic over medium heat until lucent. Stir in the flour and cook stirring for 1-2 minutes. Add the mushrooms, tomatoes and courgettes. Season with salt, pepper, oregano and the instant stock. Cook for 4-5 minutes. Pour in the single cream, basil and parsley and cook stirring for another minute.

Preheat the oven to 200°C.

In a buttered casserole dish, coat the bottom with some of the vegetable sauce, then layer in turn sheets of lasagna and vegetable sauce. The last layer should be sauce.

Sprinkle with the grated cheese and bake for 30-40 minutes.
