Ingredients

½	courgette, sliced
1	shallot, chopped
½	red bell pepper, diced
1 tsp	oil
2	eggs
1 tbsp	milk
	salt and freshly ground black pepper
2 tbsp	cream cheese
1 tbsp	sparkling water
1 tbsp	basil, chopped

Instructions

In a pan heat the oil. Sauté the shallot, bell pepper and the courgette until lucent. Mix together the eggs and the milk. Season with salt and pepper and pour over the vegetables. Cover and cook over medium heat until set.

Mix together the cream cheese and the water. Season to taste with salt and pepper. Stir in the basil.

Serve the tortilla with the cream cheese dip.
