- Ingredients:
- 1-1/4 cups all-purpose flour
- 3/4 cup yellow cornmeal
- 2 Tablespoons sugar
- 1 Tablespoon baking powder
- 3/4 teaspoon salt
- 1-3/4 cups milk
- 6 Tablespoons margarine, melted
- 2 large or extra-large eggs, separated
This is a house specialty in the heart of corn country!
Combine flour, cornmeal, sugar, baking powder, and salt in large bowl. Make a well in the center and pour in milk, butter, and egg yolks. Beat until smooth. Beat egg whites until peaks form, but are not extra stiff. Fold into batter. Serve with applesauce or maple syrup.
