Cornmeal blueberry pancakes recipe details
- Ingredients
- 2 cups sifted white wheat flour
- 2 cups cornmeal
- 8 teaspoons baking powder
- 4 Tablespoons granulated sugar
- Dash salt
- 1-1/2 cup blueberries
- 2-1/2 cups milk
- 2 eggs
- 1/4 cup oil
Wonderful combination of cornmeal texture with the sweetness of blueberries.
Sift dry ingredients together. Add blueberries to dry ingredients to prevent clumping of berries in batter. Mix milk, oil, eggs in a separate bowl and add to dry ingredients. Mix well. Pour about 1/4 cup batter on preheated griddle. Cook until bubbles form and pancakes are lightly browned on the bottom, then flip pancakes over and continue cooking. Serve with warm maple syrup.
