Ingredients
3 Tablespoons butter
3 to 4 cups corn, fresh or frozen
1 cup onion, medium dice
2 shallots, small dice
1/2 cup red bell pepper, medium dice
1/2 cup green bell pepper, medium dice
1/2 cup yellow bell pepper, medium dice
2 Tablespoons chopped Italian parsley
4 Tablespoons chopped scallions
1/4 teaspoon dried thyme
1 Tablespoon fresh basil
1/2 teaspoon cayenne pepper
1 cup heavy cream
Salt and pepper to taste
Sugar to taste

Melt butter in a sauce pan. Add diced onions and shallots; saute until vegetables are soft but not brown. Add rest of ingredients and simmer until corn is cooked. Adjust taste with salt, pepper, and sugar.
