Corn blini recipe details
Ingredients
For the batter: | |
100 ml | milk |
5 g | yeast, fresh |
100 g | floury potatoes, peeled, diced and cooked |
60 g | cornmeal |
30 g | flour |
3 | eggs |
5 g | baking powder |
15 g | butter |
100 g | corn, canned, drained |
salt and pepper | |
For frying: | |
200 ml | pine nut oil |
Instructions
In a saucepan, heat up the milk and dissolve the yeast. Cover the mixture and set aside in a warm place. Leave to stand for 1 hour.Peel, dice then cook the potatoes until done. Drain, then mash and mix with the remaining ingredients. Add the milk and yeast mixture and stir until you get a smooth batter. Season with salt and pepper.
In a skillet, heat the pine nut oil. Pan-fry blinis, approximately 3cm in diameter, 1cm thick, in the hot oil on both sides until golden brown.
Before serving allow the blinis to drip off on kitchen paper.
