Ingredients

For the batter:
100 ml milk
5 g yeast, fresh
100 g floury potatoes, peeled, diced and cooked
60 g cornmeal
30 g flour
3  eggs
5 g baking powder
15 g butter
100 g corn, canned, drained
salt and pepper
For frying:
200 ml pine nut oil

Instructions

In a saucepan, heat up the milk and dissolve the yeast. Cover the mixture and set aside in a warm place. Leave to stand for 1 hour.

Peel, dice then cook the potatoes until done. Drain, then mash and mix with the remaining ingredients. Add the milk and yeast mixture and stir until you get a smooth batter. Season with salt and pepper.

In a skillet, heat the pine nut oil. Pan-fry blinis, approximately 3cm in diameter, 1cm thick, in the hot oil on both sides until golden brown.

Before serving allow the blinis to drip off on kitchen paper.
