- Ingredients
- 2 Tablespoons olive oil
- 2 cloves garlic, crushed
- 6 to 8 large eggs
- 2 Tablespoons minced fresh basil
- 1 bunch spinach
- 8 ounces mushrooms of choice, sliced
- 8 ounces hot Italian sausage (uncooked)
- 1/2 cup Parmesan cheese
Wash spinach well and drain until almost dry; remove stems and chop. Remove sausage from casing and crumble. Heat 10-inch skillet on medium heat. Add oil, garlic, basil, spinach, and sausage. Cook for 6 to 8 minutes. Add mushrooms. Saute for 4 to minutes until semi-soft. Whisk eggs until light yellow. Add cheese and any seasoning (salt, pepper, oregano, etc.).
Shake skillet to evenly distribute filling. Add eggs and cook 2 minutes on medium heat without stirring. Move to 400-degree preheated oven and bake until puffed up and set (about 10 to 15 minutes).
