Ingredients
Serves: 8- 1 (2 1/2 pound) boneless pork loin roast
- salt and pepper to taste
- Glaze
- 1/2 cup honey mustard
- 3 tablespoons prepared horseradish
- 2 tablespoons brown sugar
- 1 (29 ounce) can sliced peaches, well drained
- 2 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons melted butter
Preparation method
Prep: 5 mins | Cook: 1 hour 15 mins1. Preheat oven to 350 degrees F.
2. Season the pork loin with salt and pepper to taste and place into a 9×13-inch baking dish. Roast in the preheated oven for 45 minutes.
3. While the pork is roasting, make the glaze by stirring together the honey mustard and horseradish with 2 tablespoons of brown sugar.
4. After the pork loin has cooked 45 minutes, spread the glaze all over the roast. Return to the oven, and continue cooking until the pork registers at least 145 degrees F on a meat thermometer, about 20 minutes more. Once done, remove pork to a platter, cover with aluminum foil, and let rest in a warm place.
5. Gently toss the peach slices with 2 tablespoons brown sugar, the cinnamon, and melted butter. Spread the peaches into the pork roasting pan and return to the oven. Bake 10 minutes until hot and bubbly.
6. Slice the pork loin and serve surrounded by the hot peach slices.
