- Ingredients
- 1 cup butter, softened
- 1/2 cup vegetable oil
- 4 eggs
- 3 cups all-purpose flour
- 3 cups sugar
- 1/4 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
- 1/2 teaspoon rum extract
Grease a large tube pan. In a large bowl, beat together butter and oil until smooth. Add eggs one at a time, beating after each to incorporate thoroughly. In a separate bowl combine the flour, sugar, and salt. Add dry ingredients to butter and egg mixture alternately with the milk. Add the extracts and blend. Pour batter into prepared pan and place in the center of a cold oven. Turn the oven temperature to 350, and bake for 90 minutes. This makes a basic pound cake with a wonderful texture, and a delightful sugary crust. It should be allowed to sit for a day before slicing, and it freezes beautifully. Variations: You may soak a cup of raisins in 1/2 cup brandy, drain, and toss with 1/2 cup flour, and add at the last. You may also add nuts.
