Coffee ice cream fudge cake recipe details
Ingredients
120 ml | corn syrup |
240 ml | whipping cream |
180 g | semisweet chocolate, chopped |
16 | Graham crackers, broken into pieces |
140 g | toasted almonds |
40 g | white sugar |
1.2 l | coffee ice cream, softened |
200 g | marshmallow creme |
Instructions
To make the fudge sauce:Combine heavy cream and corn syrup in heavy saucepan. Bring to a boil, remove from heat, add chocolate and whisk until smooth. Refrigerate until cool, about 45 minutes.
Preheat oven to 180°C.
To make the ice cream cake:
Finely grind graham crackers and almonds in a blender or food processor. Stir in sugar, add butter and process until moist crumbs form.
Press mixture into bottom and sides of 9 inch /22 cm springform pan. Bake for about 12 minutes. Allow to cool, then spread 500g of the softened ice cream over crust. Spoon 180ml of the fudge sauce over ice cream and freeze until set. When frozen, repeat layering. Cover and freeze overnight. Refrigerate remaining fudge sauce.
The next day, warm the remaining fudge sauce in a small saucepan.
To serve:
Spread the marshmallow creme over cake. Loosen cake with knife and remove sides of pan. Serve immediately with warmed fudge sauce.
