Cod with grapes and champagne recipe details
Ingredients
500 g | cod fillet, rinsed, pat dry |
240 ml | Champagne |
60 ml | double cream |
125 g | green grapes, seedless, halved |
1 tbsp | fresh tarragon, chopped |
salt and pepper, to taste | |
butter, for greasing |
Instructions
Grease a shallow baking dish with some butter and line with a piece of foil just large enough to cover the dish.Lay the cod fillets in the dish and season with salt and pepper.
Preheat your oven to 175°C.
In a small saucepan, combine the Champagne and tarragon and bring to a boil. Cook for 1 minute.
Pour the hot liquid over the fish fillets and cover with the buttered foil.
Bake for about 3-5 minutes.
Using a spatula, carefully remove the fillets from the liquid and transfer to a plate. Keep warm.
Pour the liquid back into the saucepan, add the cream and bring to a boil. Cook until the sauce is thickened.
Discard the tarragon and stir in the grapes.
Arrange the cod fillets on individual plates and spoon the sauce over and serve.
