Ingredients

500 g cod fillet, rinsed, pat dry
240 ml Champagne
60 ml double cream
125 g green grapes, seedless, halved
1 tbsp fresh tarragon, chopped
salt and pepper, to taste
butter, for greasing

Instructions

Grease a shallow baking dish with some butter and line with a piece of foil just large enough to cover the dish.

Lay the cod fillets in the dish and season with salt and pepper.

Preheat your oven to 175°C.

In a small saucepan, combine the Champagne and tarragon and bring to a boil. Cook for 1 minute.

Pour the hot liquid over the fish fillets and cover with the buttered foil.

Bake for about 3-5 minutes.

Using a spatula, carefully remove the fillets from the liquid and transfer to a plate. Keep warm.

Pour the liquid back into the saucepan, add the cream and bring to a boil. Cook until the sauce is thickened.

Discard the tarragon and stir in the grapes.

Arrange the cod fillets on individual plates and spoon the sauce over and serve.
