Crunchy fried chicken slathered in tasty peanut sauce. The flavors of Thailand meet the classic dish of the South in this surprisingly simple dinner.

Ingredients
Serves: 4- 1 1/2 cups flour
- 1 cup coconut milk
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1 (3 1/2 pound) broiler chicken, cut into 8 pieces
- 1/4 cup canola oil
- Sauce:
- 1 cup water
- 1/3 cup packed brown sugar
- 1/4 cup soy sauce
- 3 1/2 teaspoons cornstarch
- 2 teaspoons rice vinegar
- 2 teaspoons peanut butter
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground ginger
- 3 tablespoons minced fresh cilantro
Preparation method
Prep: 30 mins | Cook: 25 mins1. Preheat oven to 400 degrees F and coat a 13×9-inch baking dish with nonstick cooking spray.
2. Set up dredging stations. Pour 1/2 cup flour in one shallow pie pan, coconut milk in a second pie pan, and salt, garlic powder, cayenne, and 1 cup flour in a third pie pan.
3. Coat chicken pieces in flour, then dip in coconut milk. Finally, dredge in the seasoned flour.
4. Pour oil into a large skillet and set over medium heat. Sear chicken in hot oil, turning to brown all sides, then place in prepared baking dish.
5. Bake for about 30 minutes, until chicken reaches an internal temperature of 180 degrees F.
6. While chicken bakes, make the sauce: stir water, brown sugar, soy sauce, cornstarch, vinegar, peanut butter, cayenne, and ginger together in a saucepan. Set over high heat.
7. When sauce mixture comes to a boil, cook for 2 minutes to thicken. Then add cilantro and stir well.
8. Serve fried chicken with the peanut sauce for dipping.
