Ingredients
1 medium | potato, cooked and mashed |
450 g | coconut, shredded |
1 tsp | salt |
1 tsp | vanilla |
1 kg | confectioners’ sugar |
500 ml | chocolate, melted |
Instructions
Combine potato mash, coconut, salt and vanilla. Mix well. Gradually add sugar and mix until thoroughly blended.Shape into eggs, place on cookie sheet and leave overnight. Next day, dip into chocolate and leave eggs to harden.
