Coconut carrots recipe details
Ingredients
600 g | carrots |
50 g | desiccated coconut |
50 ml | coconut cream or coconut milk |
1 tsp | garlic, grated |
1 tsp | ginger, grated |
salt and pepper | |
chili powder | |
½ tsp | sugar |
oil, for cooking |
Instructions
Cut the carrots into 2″ sticks and boil them for 5-8 minutes in salted water. Drain well. Mix the desiccated coconut with the coconut cream and let soak for a few minutes. Then mix it with the carrots until they are well coated.Heat some oil in a wide pan and fry the ginger and garlic. Add the carrots, the sugar and the seasoning. Fry for a few minutes but take care not to burn the coating.
