Ingredients

3 tbsp groundnut oil
1 liter(s) boiling water
500 ml coconut milk
2  chicken breasts, boneless, skinned and thickly sliced
salt, to taste
750 g Udon noodles, fresh, or 100g dried
For the seasoning:
4  red chili, seeded and chopped
1  spring onion, chopped
2 stalks lemongras, finely chopped
3  cm fresh ginger, finely sliced
½ tsp ground turmeric
6  almonds, blanched, chopped
1 tbsp fish sauce, alternatively 1 pinch of salt
1 clove(s) garlic, pressed
To serve:
100 g bean sprouts, fresh
4  spring onions, sliced in rings
1  red chili, seeded and sliced in rings
fresh coriander, if desired

Instructions

Fill into a blender all ingredients for the seasoning and process to a smooth purée, if too thick, add some drops of water,

Heat oil in the wok. Lightly sauté the condiment paste for 5 minutes. Add one litre of boiling water, then add the coconut milk and bring the soup to the boil. Stir frequently. Add the thickly sliced chicken breast and bring to the boil again. Poach the chicken breast over gentle heat for approximately 10-15 minutes until cooked. Season to taste with salt.

Rinse fresh Udon noodles with cold water, then cook for 1-2 minutes. Alternatively cook the dried Udon noodles in unsalted water for 10-12 minutes, then drain.

Evenly divide the noodles into large bowls and add the chicken breast with the soup. Sprinkle with bean sprouts, spring onions, chili and chopped coriander as desired and serve.
