Chopped clams and leftover potatoes make for a coastal contribution to your breakfast.

Ingredients

Serves: 6
  • 1 1/4 cups finely chopped clams, drained
  • 2 cups cooked, mashed potatoes
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 eggs, lightly beaten
  • 2 tablespoons canola or vegetable oil, for frying

Preparation method

Prep: 15 mins | Cook: 20 mins

1. Stir clams, mashed potatoes, butter, salt, pepper, and lemon juice together in a bowl. Incorporate the eggs, then form the mixture into 12 patties.
2. Pour oil into a large skillet and set over medium heat. Cook patties in hot oil for about 8 minutes, or as long as it takes to brown both sides of the patties. Work in batches, adding more oil if necessary, until patties are all cooked. Serve.
