Ingredients
Serves: 6- 1 1/4 cups finely chopped clams, drained
- 2 cups cooked, mashed potatoes
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 eggs, lightly beaten
- 2 tablespoons canola or vegetable oil, for frying
Preparation method
Prep: 15 mins | Cook: 20 mins1. Stir clams, mashed potatoes, butter, salt, pepper, and lemon juice together in a bowl. Incorporate the eggs, then form the mixture into 12 patties.
2. Pour oil into a large skillet and set over medium heat. Cook patties in hot oil for about 8 minutes, or as long as it takes to brown both sides of the patties. Work in batches, adding more oil if necessary, until patties are all cooked. Serve.
