Christmas sweet potato casserole recipe details
Ingredients
650 g | sweet potatoes, mashed |
2 medium | eggs |
100 g | sugar |
120 ml | water |
½ tsp | salt |
100 g | butter |
1 tsp | vanilla extract |
200 g | brown sugar |
100 g | flour |
100 g | pecans, finely chopped |
Instructions
First, peel and bowl the potatoes to create your mash.Then, in one bowl, mix together the mashed sweet potatoes, eggs, sugar, milk and salt. Add 50g of the butter and the vanilla.
In another bowl combine the brown sugar, flour, nuts, and the remaining butter.
Then add half of the mixture to the potato mixture. Pour into a baking dish and sprinkle the remaining nut and flour mixture over the mash mixture as topping.
Bake in the oven at 180°C for 30 minutes.
