Christmas fruitcake recipe details
Ingredients
250 g | dried dates, pitted and chopped |
175 ml | cold fruit tea |
250 g | flour |
4 tsp | baking powder |
1 tsp | gingerbread spice mix |
175 | brown sugar |
1 | egg, whisked |
1 tbsp | cane sugar |
Instructions
Put the dates into a bowl and add the tea. Leave to soak for 2 hours.Add the remaining ingredients except the cane sugar and mix thoroughly. Pour the mixture into a loaf pan lined with parchment paper. Sprinkle with the cane sugar.
Bake in the preheated oven at 180 degrees for 60-90 minutes or until a skewer inserted in the middle comes out clean. Let cool for 5-10 minutes, then turn over onto a wire rack to cool completely.
