- 1 cup cheddar cheese, cut into 1/2-inch cubes
- 8 eggs
- 1/2 cup chopped onions
- 1/2 cup cut green bell peppers (long triangles) – will resemble Christmas trees
- 1/2 cup cut red bell peppers (1/2-inch squares)
- 1/2 cup diced ham
The green and red peppers will give you a Christmas look.
In a small frying pan, pre-cook onions and peppers for 3 to 4 minutes. Set aside. Scramble ham and eggs and cook until about half done, then add cheese. When almost completely cooked, add peppers and onions.
