Ingredients
2 large | Perlemoen |
butter and olive oil | |
lemon juice, fresh | |
2 clove(s) | garlic, crushed |
black peppercorns, grounded | |
4 | bacon, rashers rindless, finely chopped |
100 g | button mushrooms, finely sliced |
Instructions
Scrub the Perlemoen well, cut off and discard “skirts” and tenderise lightly, pounding on both sides, particular the tougher outer edges.Place each Perlemoen on a double layer of heavy foil, cut large enough to wrap securely. Add to each a knob of butter, a little olive oil, lemon juice, garlic, pepper, bacon and mushrooms.
Wrap securely and grill on the grid over hot charcoals for 35 minutes.
Unwrap and place the Perlemoen on a serving plate.
Slice the Perlemoen and pour sauce with bacon and mushrooms on top.
