Chocolate sorbet recipe details
Ingredients
500 ml | water |
100 g | soft brown sugar |
120 g | granulated sugar |
2 tbsp | unsweetened cocoa powder |
100 g | dark chocolate, 70% plus cocoa solids, chopped |
1 tsp | vanilla extract |
1 tsp | Galliano Amaretto, brandy, or cherry brandy |
Instructions
In a saucepan add the water and sugars and bring to a boil. Simmer until all the sugar has dissolved. Add the cocoa powder and stir until dissolved. Add the chocolate and stir once or twice and turn off the heat. Whisk to assist the chocolate to melt. Allow to cool. Add the vanilla and alcohol when cold.Refrigerate for several hours, overnight if you wish. Set your ice cream maker to chill, if you have one.
The mixture may seem to have split; whisk it for a few seconds and it will be fine.
Pour the mixture into the bowl of your ice cream maker. Allow it to churn until it looks glossy about 20 minutes. Allow it to churn until you achieve the desired texture – more churning results in a smoother finish. Turn it out to a serving dish.
If you do not have an ice cream maker, pour into a container and freeze for about an hour. Turn out the mixture into a bowl and whisk it for 1-2 minutes with an electric whisk and return it to freeze. After an hour, turn it out and whisk it again. Repeat after another hour. Allow to soften out of freezer for 5-10 minutes before serving.
Allow 2-3 small scoops per person.
