- Ingredients
- 1 cup butter
- 1-1/4 cups sugar (divided)
- 2 egg whites
- 4 egg yolks
- 1-1/2 cups sugar
- 1 cup hot mashed potato
- 1/3 cup water
- 1-3/4 cups all-purpose flour
- 1/2 cup cocoa
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup milk
- 1 teaspoon vanilla
- 1 cup chopped nuts
These delicious cakes go so well with our backpack picnic lunches. The secret ingredient is the potato.
In a mixing bowl, cream butter and 1 cup of sugar. Add egg yolks; beat well. Add potatoes and mix thoroughly. Combine flour, cocoa, baking powder, cinnamon, salt, nutmeg, and cloves. Add dry ingredients to creamed mixture alternately with milk, beating until smooth. Stir in vanilla and nuts. Beat egg whites until foamy; fold into batter. Pour into greased and floured 13 x 9 x 2-inch baking pan. Bake at 350 degrees for 40 to 45 minutes. Cool.
