Chocolate mandarin ice cream recipe details
Ingredients
4 | egg yolks |
130 g | light brown sugar |
2 tbsp | cocoa |
250 ml | heavy cream |
65 ml | Grand Marnier, or other orange flavored liqueur |
175 g | good quality milk chocolate, finely chopped |
grated orange zest |
Instructions
Combine the egg yolks, brown sugar and cocoa in a large bowl. Using a whisk or mixer beat until slightly thickened.Warm the cream until small bubbles begin to appear at the edges. Add 60 ml of the hot cream to the egg mixture, stirring steadily. Then stir the egg mixture into the remaining hot cream.
Cook over medium heat, stirring constantly until thick enough to coat the back of a spoon. Do not allow to boil or it will curdle.
Stain the mixture through a fine sieve into a metal bowl. Stir in the liqueur, cover and refrigerate to cool completely. Stir in the chocolate and orange zest and pour into an ice cream maker. Freeze according to the manufactures’ direction.
