Chocolate cake with apricot filling recipe details
Ingredients
700 g | dark chocolate coating, chopped |
8 medium | eggs |
200 g | sugar |
200 g | soft butter |
1 pinch(es) | salt |
150 g | flour |
1 tsp | baking powder |
1 tbsp | cocoa powder |
75 g | ground almonds |
5 tbsp | apricot jam |
Instructions
Melt 200g of the chocolate. Separate the eggs. Whisk the egg whites until stiff, adding by and by 100g of sugar. Cream together the butter, 100g of sugar and a pinch of salt. Whisk in the egg yolks. Fold in the melted chocolate and the beaten egg white. Sift the flour with baking powder, cocoa powder and the almonds over the batter and fold in until well combined.Fill the batter into a lined baking tray. Bake in the preheated oven at 150°C for 15-20 minutes or until a wooden skewer comes out clean. Remove from the oven and allow to cool for an hour. Halve the cake lengthwise. Spread one half with the jam and put the other half on top. Cut the cake into 24 pieces.
Melt the remaining chocolate. Allow to cool for 10 minutes. Dip the cake pieces into the coating. Allow to dry for 30 minutes.
