Ingredients
500 g | red plums |
600 ml | water |
200 ml | buttermilk |
200 ml | fruity white wine |
100 g | soft brown sugar |
1 tbsp | lemon juice |
1 pinch(es) | ground cloves |
½ tsp | grated lemon peel |
6 | lemon peel strips |
Instructions
In a large saucepan, combine plums, water, wine, sugar, lemon juice and cloves. Bring to a boil and simmer gently over low heat for 10 minutes or until the plums are very soft.Pass through a sieve into a bowl. Chill and place into the fridge until completely cold.
Stir in the buttermilk and the grated lemon peel. Freeze the soup for 2 hours before serving.
Serve ice-cold in small soup bowls or dessert glasses, garnished with the lemon peel strips.
