|2 tbsp||bacon, diced|
|3 tbsp||dried chili peppers, crushed|
|¼ tsp||ground cumin|
|1 tsp||dried oregano|
|1 l||beef stock|
|1 tbsp||masa harina, special Mexican corn flour, if not available use cornstarch|
In a saucepan heat the oil. Sauté onion, garlic and bacon until lucent. Add oregano, chilies and cumin and pour in the stock. Bring to a boil. Reduce the heat and cook for 30 minutes.
Combine the masa harina with a dash of cold water and whisk the mixture into the sauce. Cook for 10 more minutes. Check seasoning and adjust if necessary.
