Ingredients
3 tbsp | oil |
2 clove(s) | garlic, crushed |
1 | onion, chopped |
2 tbsp | bacon, diced |
3 tbsp | dried chili peppers, crushed |
¼ tsp | ground cumin |
1 tsp | dried oregano |
1 l | beef stock |
1 tbsp | masa harina, special Mexican corn flour, if not available use cornstarch |

Instructions
In a saucepan heat the oil. Sauté onion, garlic and bacon until lucent. Add oregano, chilies and cumin and pour in the stock. Bring to a boil. Reduce the heat and cook for 30 minutes.Combine the masa harina with a dash of cold water and whisk the mixture into the sauce. Cook for 10 more minutes. Check seasoning and adjust if necessary.
