Chili con carne with chorizo recipe details
Ingredients
350 g | pork mince |
350 g | beef mince |
salt and freshly ground black pepper | |
200 g | onions, sliced |
1 clove(s) | garlic, chopped |
2 tbsp | oil |
1 tbsp | tomato puree |
100 g | crème fraîche |
paprika powder | |
1 can(s) | tomatoes |
1 can(s) | kidney beans |
30 g | green chillies, seeded and sliced |
100 g | chorizo, sliced |
sugar | |
2 | spring onions, sliced |
40 g | freshly grated Cheddar cheese |
chili powder | |
400 ml | vegetable stock |
Instructions
In a large saucepan, heat the oil and fry the minced meat until brown and crumbly. Add the onions, the garlic and the tomato purée and cook stirring for some minutes. Season with salt, pepper, sugar, paprika powder and chili powder.Pour in the stock and the tomatoes and add the chilies. Bring to a boil. Cover and simmer for 60 minutes. Add the beans and the chorizo and bring to the boil again. Season to taste with salt, pepper and chili powder.
Ladle the chili con carne into soup plates and garnish each with a dollop of crème fraîche. Serve sprinkled with the cheese and the spring onions.
