Chickpea soup with spinach recipe details
Ingredients
250 ml | chickpeas, dried |
2 medium | tomatoes, quartered |
2 medium | onions, cut in half |
5 clove(s) | garlic |
1 tsp | paprika sweet |
1 tsp | salt |
1 leaves | bay leaf |
650 g | spinach |
2 tbsp | white wine |
2 tbsp | olive oil |
2 tbsp | parsley, chopped |
Instructions
Soak chickpeas in cold water to cover overnight then drain well.Place chickpeas in a large saucepan and add 1 liter of water. Bring to boil and add whole tomatoes, onions, garlic, paprika, salt and bay leaf. Cover and cook over low heat for 75 minutes.
Clean spinach and place damp spinach in a large saucepan. Cover and cook for 2 minutes. Drain well and chop spinach.
Remove onion quarters, tomatoes, garlic and 1 tablespoon cooked chickpeas from saucepan. Discard tomato peels.
Press mixture through a sieve.
Heat oil in a small saucepan, add pureed mixture and cook for 3 minutes, return to saucepan.
Stir in wine and chopped spinach and simmer for 10 minutes. Remove bay leaf and garnish with chopped parsley.
