Chicken with a Royal Flavour recipe

Ingredients
For the Vinaigrette: | |
2 tsp | mustard |
3 tsp | white wine vinegar |
8 tsp | extra vergin olive oil |
½ tsp | honey |
salt and freshly ground black pepper | |
For the chicken: | |
1 | chicken, ready to cook, jointed into 8 pieces |
2 tbsp | vinaigrette |
1 | red onion, diced |
2 | bell peppers, red and yellow, cleaned and diced |
4 clove(s) | garlic, minced |
2 tbsp | olive oil |
salt and freshly ground black pepper |
Instructions
In a casserole dish, combine the vegetables with the oil. Season with salt and pepper.
In a bowl, combine the chicken pieces with the vinaigrette and marinate for 30 minutes.
Arrange the chicken pieces on top of the vegetables and bake in the preheated oven at 190°C for 40 minutes or until the chicken is golden and crispy.
