Chicken soup with coconut milk recipe details
Ingredients
For the broth: | |
1 | soup hen |
ginger, approx. 2 cm | |
1 handful | soup vegetables, carrot, celeriac, leek, onion |
salt | |
For the soup: | |
½ bunch(es) | celery |
½ head(s) | cabbage, the light-green leaves |
1 | onion |
3 | carrots |
butter | |
ginger, approx. 2 cm | |
1 clove(s) | garlic |
½ l | coconut milk, you maý need more |
salt and pepper | |
chopped fresh herbs, to garnish; e.g. coriander, parsley |
Instructions
Wash the soup hen. Peel the ginger. Wash the soup vegetables. Put all together into a large soup pot. Add water until the hen is covered. Season with salt and bring to the boil. Simmer without a lid over medium heat for 2 hours or until the hen is soft. Add by and by water, to replenish evaporated liquid.Take out the hen, allow to cool until you can handle it without burning yourself, then remove skin and bones. Cut the flesh in bite sized pieces. Strain the stock into a saucepan.
While cooking the hen, cut all the other vegetables to stripes and sauté them in butter. Add the finely chopped ginger and garlic.
Add 2 litres of the strained broth and the coconut milk into the saucepan and also add the chicken meat. Heat the soup but don’t allow to boil anymore. Season to taste with salt and pepper and serve sprinkled with fresh herbs.
