Ingredients

1  yellow bell pepper, cleaned and cut into bite-sized pieces
2  tomatoes, peeled and roughly chopped
1 small onion, chopped
1 clove(s) garlic, crushed
2 tsp olive oil
100 g peas, fresh or frozen and thawed
1 pinch(es) saffron powder
1 pinch(es) paprika powder
salt and pepper
100 g rice
250 ml chicken stock
200 g chicken breast fillet, cut into bite-sized pieces
1  lemon

Instructions

Heat oil in a saucepan or a high rim frying pan and fry onions and garlic until translucent. Add the rice and cook stirring for a minute. Pour in the stock and bring to a boil. Season with saffron, paprika, salt and pepper.

In another pan, fry the chicken pieces until golden and almost cooked.

Fold bell pepper, tomato and peas in the rice and divide the meat on top. Bake the paella in the preheated oven at 175°C for about 10 minutes.

Serve garnished with lemon wedges.
