Ingredients
1 | yellow bell pepper, cleaned and cut into bite-sized pieces |
2 | tomatoes, peeled and roughly chopped |
1 small | onion, chopped |
1 clove(s) | garlic, crushed |
2 tsp | olive oil |
100 g | peas, fresh or frozen and thawed |
1 pinch(es) | saffron powder |
1 pinch(es) | paprika powder |
salt and pepper | |
100 g | rice |
250 ml | chicken stock |
200 g | chicken breast fillet, cut into bite-sized pieces |
1 | lemon |
Instructions
Heat oil in a saucepan or a high rim frying pan and fry onions and garlic until translucent. Add the rice and cook stirring for a minute. Pour in the stock and bring to a boil. Season with saffron, paprika, salt and pepper.In another pan, fry the chicken pieces until golden and almost cooked.
Fold bell pepper, tomato and peas in the rice and divide the meat on top. Bake the paella in the preheated oven at 175°C for about 10 minutes.
Serve garnished with lemon wedges.
