Ingredients

1 tbsp olive oil
6  skinless chicken breasts, each cut into 3 – 4 pieces
3 large red peppers, deseeded and cut into chunks
2 medium onions, chopped
8  smoked back bacon rashers, cut into strips
2 clove(s) garlic, finely chopped
3 tbsp fresh oregano, chopped
690 g passata
50 g black olives, pitted
300 g mozzarella, diced
fresh basil leaves, shredded

Instructions

Heat the oven to 180 C. Heat oil in an oven proof casserole.

Add the chicken and peppers and brown the chicken all over. Remove and set aside.

Add the onions and turkey bacon, then cook for 10 minutes, adding the garlic and oregano for the last minute.

Return the chicken and peppers to the pan with the passata. Cover and cook in the oven for 1 hour. Add the olives and cook for a further 30 minutes until the chicken is cooked.

Remove from the oven and stir in the mozzarella, then season. Sprinkle over the shredded basil and serve.
