Ingredients

150 g lettuce
1  red onion, chopped
450 g apples, peeled, cored and sliced
4 tbsp apple vinegar
salt and pepper
sugar
1 tsp mustard
8 tbsp oil
½ tsp rosemary
½ tsp marjoram
50 g walnuts, chopped
500 g chicken liver
2 tbsp flour

Instructions

In a bowl, combine the lettuce leaves, apples and onions.

In a separate bowl, mix together vinegar, mustard, 6 tablespoons of oil, rosemary and marjoram. Season with salt, sugar and pepper. Pour the dressing over the salad and mix thoroughly. Sprinkle with walnuts.

In a saucepan, heat the remaining oil. Dust the liver with flour and sauté in the oil for 4-6 minutes. Season to taste with salt and pepper.

Arrange the liver on top of the salad and serve immediately.
