Chicken in coconut peanut sauce recipe details
Ingredients
500 g | chicken breast, cut into strips |
1 tbsp | peanut oil |
1 piece(s) | ginger root, peeled, shredded |
1 small | onion, thinly sliced |
1 | green chili pepper, seeded, thinly sliced |
3 clove(s) | garlic, finely minced |
For the sauce: | |
1 tsp | Sambal Ulek |
1 tbsp | peanut butter |
240 ml | chicken broth |
240 ml | coconut milk |
Instructions
In a small saucepan, combine coconut milk, chicken stock, sambal ulek, and peanut butter, bring to a simmer. Whist until well blended and cook unitl heated through. Set aside.Heat oil in wok, add chicken, onions, garlic, ginger, and chili pepper and stir-fry until chicken is lightly browned and onions are tender.
Add coconut sauce to the wok and simmer uncovered over low heat until chicken is done and sauce is thickened, about 20 minutes.
Serving suggestions:Serve with rice.
