This is an easy and fast chicken fried rice recipe. It tastes great and you can modify it to your tastes.

Ingredients
Serves: 4- Rice:
- 2 cups water
- 2 cups long grain white rice
- 1 tablespoon margarine
- 1/2 teaspoon salt
- Chicken:
- 2 tablespoons vegetable oil
- 3/4 pounds boneless skinless chicken breast, cut into small chunks
- 2 eggs, slighty beaten
- 1/2 teaspoon salt
- 2 dashes pepper
- 2 1/2 tablespoons soy sauce
- 1/4 cup sliced green onion (optional)
Preparation method
Prep: 10 mins | Cook: 30 mins1. Boil the water. Add the rice, margarine, and salt. Return the water to a boil and cover on low heat for 20 minutes or until the water is absorbed. Remove the rice from the heat and fluff the rice with a fork.
2. In a large skillet, heat the oil over high heat; add the chicken chunks and stir fry it for 3 minutes or until no pink remains, stirring constantly. Add the eggs, salt, and pepper and stir fry over medium heat for 3 to 4 minutes, stirring constantly. Add the rice and soy sauce and cook for 3 to 4 minutes.
3. Stir in the sliced onion, remove from the skillet, and serve!
