Chicken Fillet in Puff Pastry recipe

Ingredients
300 g | mushrooms, cleaned and chopped |
1 | onion, finely chopped |
150 g | ham, chopped |
2 tbsp | butter |
3 sprig(s) | parsley, finely chopped |
1 tsp | dried thyme |
4 | chicken breast fillets, each approx. 180 g |
1 pack(s) | ready rolled out puff pastry |
1 | egg, separated |

Instructions
In a saucepan, heat the butter and sauté mushrooms, ham and onion slightly. Add parsley and thyme and season to taste with salt and pepper. Allow to cool.Lengthwise cut a deep pocket into the chicken fillets. Season with salt and pepper. Stuff the cold mushroom mixture into the pocket and press together the edges slightly.
Cut the puff pastry into 4 squares and brush the edges with egg white. Put a chicken fillet on top of each, wrap with the pastry and place the packets onto a lined baking tray. Brush the pastry with egg yolk. Bake in the preheated oven on the middle rack at 200°C for about 20 minutes.
Serve with a green salad of your choice.
