Chicken Fettuccine with Spicy Pumpkin Sauce recipe

Ingredients
2 | chicken breasts, boneless, sliced into strips |
400 g | fettucine, cooked al dente |
200 g | pumpkin, peeled, seeded, sliced |
300 ml | vegetable broth |
¼ tsp | coriander, ground |
½ tsp | cayenne pepper |
60 ml | plain yogurt |
1 tbsp | honey |
20 g | fresh parsely, chopped |
oil or butter, for frying |
Instructions
In a medium saucepan, combine pumpkin, broth, oriander and pepper. Heat over medium heat, stirring often until well-combined. If broth doesn’t cover all of the pumpkin, add a bit of water. Cover pan with lid. Leave to cook until pumpkin pieces are soft enough to be squashed with a spoon.Add yogurt and honey and stir well. Allow to simmer for about 5 minutes. Most liquid should be absorbed. Transfer to a blender and process until smooth.
Sauté chicken strips in a bit of oil or butter until cooked through.
Cook fettuccine al dente.
Serve pasta topped with chicken and sauce. Garnish with parsley, if desired.
