Ingredients
Serves: 4- 1/3 cup hummus
- 4 (8-inch) flour tortillas
- 2 cups cubed cooked chicken breast (see footnote)
- 1/4 cup chopped roasted red pepper
- 1/4 cup crumbled feta cheese
- 1/4 cup thinly sliced fresh basil
Preparation method
Prep: 15 mins1. Coat one side of each tortilla with hummus, then arrange chicken, red pepper, feta, and basil on top. Roll up like burritos and serve.To quickly cook chicken:
For 2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound skinless, boneless chicken breasts (cubed) for 5 minutes or until chicken is no longer pink. (Or you could buy cooked rotisserie chicken from the supermarket.)
