Chicken and coriander curry recipe details
Ingredients
40 g | fresh coriander |
3 large | fresh green chillies-deseeded for medium or leave in seeds for hot-roughly chopped |
3 tbsp | vegetable ghee |
2 medium | onions, thinly sliced |
6 clove(s) | garlic, crushed |
1 tsp | turmeric |
1 tsp | ground coriander |
½ tsp | ground cumin |
1 tsp | chilli powder |
8 | small, medium chicken drumsticks |
150 ml | chicken stock |
400 ml | coconut milk |
1 tsp | salt |
1 tbsp | lemon juice |
Instructions
Blend the fresh coriander, chillies and a little water into a paste and set aside.Heat ghee in a large non-stick pan and fry the onions over a medium heat, stirring frequently, for about 5-8 minutes or until lightly golden.
Reduce heat to low and stir in garlic, turmeric, ground coriander, ground cumin and chilli powder and fry, stirring frequently, for 3 minutes. add coriander paste and cook, stirring, for 10 minutes. At this point the curry doesn’t look or smell very appetizing, but don’t worry, all will come good.
Add drumsticks and stir to coat evenly. add stock, coconut milk and salt and mix well. increase heat and bring to the boil, then reduce heat to low, cover and simmer, stirring and turning drumsticks occasionally, for about 60 minutes or until chicken is cooked through, then remove drumsticks from sauce, transfer to a serving dish and keep warm.
Add lemon juice to sauce, taste and adjust seasoning if necessary. increase heat and boil the sauce uncovered for 5-8 minutes, stirring occasionally, to thicken. then pour over the chicken and serve with plain boiled rice and home-made chips.
