Chicken and black bean chili recipe details
This super easy, flavorful chili includes healthy ingredients such as lean chicken, black beans, onion and tomato. It tastes wonderful over tortilla chips and when topped with Colby jack cheese and sour cream.

Ingredients
Makes: 2 quarts- 2 teaspoons vegetable oil
- 1 cup chopped onion
- 2 teaspoons minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon rubbed dried sage
- 1 (14 ounce) can diced tomatoes with juice
- 2 (14 ounce) cans black beans, rinsed and drained
- 1/2 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (10 ounce) can Ro*Tel(R) diced tomatoes and green chiles
- 1 (1 ounce) packet chili seasoning
- 2 large boneless, skinless chicken breasts
Preparation method
Prep: 15 mins | Cook: 6 hours1. Heat the vegetable oil in a skillet over medium heat. Stir in the onion and garlic; cook until the onion begins to turn translucent, about 5 minutes.
2. Stir the onion mixture into a slow cooker with all of the remaining ingredients except for the chicken breasts. Stir the mixture until evenly combined, then set the chicken breasts on top.
3. Cover, and cook on High for 1 hour. Reduce heat to Low and continue cooking 5 hours more.
4. Shred the chicken breast and stir back into the pot to serve.
