Chestnut soup with bacon recipe details
Ingredients
700 g | chestnuts, shelled |
some | butter |
½ bulb(s) | fresh celeríac, chopped |
1 l | chicken stock |
250 g | cream |
salt and pepper | |
paprika | |
100 g | bacon, chopped |
5 slice(s) | white bread |
Instructions
Roast chestnuts in a pan with melted butter. Add the celeriac and cook stirring for 5 minutes. Deglaze with the chicken stock and bring to a boil. Simmer for 20 minutes or until the chestnuts are soft. Add the cream and purée with a hand blender. Season to taste with salt, pepper and paprika.Cut the white bread into cubes and fry in a pan with butter until golden and crispy. In another pan, fry the bacon until crispy.
Serve the soup sprinkled with the croûtons and the bacon.
