Ingredients

2 tbsp olive oil
1 medium onion, finely chopped
375 g cherry tomatoes
2 clove(s) garlic, crushed
3 tbsp sun-dried tomato paste
325 g puff pastry, ready-made
1 medium eggs, beaten, as glaze
150 ml Crème fraîche
2 tbsp Pesto
salt and fresh ground pepper, to taste
basil leaves, torn and shredded, as garnish

Instructions

Heat the oil in a frying pan and fry the onion until soft.

Cut about half of the tomatoes in half.

Remove pan from the heat and add garlic and tomato paste and then stir in all the tomatoes until lightly coated with the sauce.

Preheat the oven to Gas Mark 7, 220°C, 425°F.

Roll out the pastry and cut out 5 rounds 5 inches, 12cm in diameter (a saucer may be used as a guide). Transfer the rounds to a lightly oiled baking sheet sprinkled with water. With the point of a knife, make a shallow cut about 1 inch, 2.5 cm all around the rim of each round, to form a rim. Brush the rims with egg wash.

Place the tomato mixture in the centre of each round, without going into the rim.

Bake for about 15 minutes until the pastry is risen.

Mix the creme fraiche, pesto and seasoning in a serving dish and sprinkle over with the shredded basil.

Remove tartlets from oven and allow to cool for a few minutes before serving.

Serve on a large platter surrounding the bowl of pesto sauce.
